No Bake Vegan Chocolate Cream Pie

This was meant for pie day. A couple days late. Oh well, still good!

5 ingredients, Vegan, No Sugar Added!

Its National Pi Day! The only math I like doing is when I’m calculating my splits in a race, so instead of celebrating 3.14159 kind of pi, I wanted to celebrate the other kind of pie….the BEST kind of pie. Chocolate pie. I am not vegan but I have friends and family who are either vegan, don’t eat dairy, or limit added sugar intake. Part of baking is being able to share the end result with friends. Trust me, I would love to eat this whole pie myself, but sharing is probably best.

I made this pie out of ingredients I already had at home. There is nothing complicated. All you need is a food processor and 5 ingredients: Walnuts, cocoa powder, dates, coconut cream, and vanilla extract.

Note: for the dates, make sure they are pitted, then soak them in water for 10 minutes to soften or put in the microwave in water for 1 minute. When measuring the dates, pack them in. 1 cup of packed, pitted, soaked dates each for the filling and crust.

Crust:
1.5 cups walnuts
1 cup dates (pitted and soaked)
1/3 cup cocoa powder

Filling:
1 can coconut cream
1 cup dates (pitted and soaked)
1/3 cup cocoa powder
1 tsp vanilla extract

For the crust, combine walnuts, dates and cocoa powder into a food processor and combine. Once the ingredients have mixed to a uniform texture, with no big lumps, pour into a greased pie pan. I sprayed mine with Pam, but you can also use coconut oil or a piece of parchment paper to prevent sticking. Press the mixture into the pie mold and trim any excess off of the edges. Place in the freezer to set while making the filling.

For the filling, add dates to the food processor and pulse until smooth. There will be little chunks no matter what, but the smoother, the better. Then add coconut cream, cocoa powder, and vanilla extract and mix until everything is smooth and consistent, this may take a few minutes. Once combined, pour the filling into the pie crust, (Instagram a pic and tag _run2run_ so we can see ☺) and put in the fridge to set, at least an hour before serving.
